Our home is a bit different than most.  Particularly our eating habits.  My husband, Chris, has Celiac Disease – an autoimmune disease wherein his body throws a temper tantrum if he ingests anything with gluten (wheat, barley, rye, and spelt).  He’s lived with it most of his life, feeling sluggish and exhausted, having many intestinal issues, getting headaches all of the time, and experiencing dental issues.  Finally this last summer we were blessed with the “wonderful” news of his condition.  The difference has been absolutely astonishing.

In addition to removing all gluten from our diet, we have changed our culinary lifestyle.  We are moving further and further away from processed foods and consuming things “closer to earth.”   A clean diet, if you will.  It may take a little more work, but I promise this – it is completely worth the result!  I’m still learning a lot about eating clean and gluten-free, but I am excited to share as we do.
